Overview
Add coconut rice or cooked quinoa to a bowl.
Top with steamed vegetables (broccoli, cubed gold potatoes, cubed sweet potatoes, carrots, bell peppers, etc.)
Top with almond butter thai sauce drizzle, fresh cilantro and sliced avocado
Coconut Rice
Add 2 cups of rice to 4 cups of coconut milk (Native Forest is the cleanest brand) plus salt.
Bring to a boil then cover and let simmer for 20 minutes.
Turn off heat and let sit for 10 more minutes.
Almond Butter Thai Sauce
1/2 cup almond butter
1/8 cup tahini
1/4 cup coconut aminos
1 tbsp lime juice
1 tsp grated ginger
1 clove garlic
1/4 cup water
1 medjool date, depitted
Steamed Vegetables
Add vegetables of your choice to the Cuisinart Digital Glass Cook Steamer. Sweet potatoes, Yukon gold potatoes, Shiitake mushrooms, onions, broccoli, bell peppers are all great options.
