As the leaves turn golden, it's the perfect time to indulge in the ultimate healing soup for those crisp fall days. And what better way to celebrate autumn than with a luscious pumpkin soup?
Ingredients That Warm the Heart
Note: I use the Cuisinart STM-1000 Digital Cook Glass Steamer to cook my pumpkin in order to retain the nutrients.
Pumpkin is packed with antioxidants such as vitamins A, C, E, beta-carotene, and is also a rich source of B-vitamins such as folates, niacin, thiamin, and pantothenic acid. It also contains minerals like calcium, potassium, and phosphorus. In addition, pumpkin is immune-boosting which will help your body during cold and flu season.
2 lbs peeled, deseeded, and chopped pumpkin
1 cup chopped onion
4 cloves of garlic, minced
1 tbsp chopped ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tsp paprika
1 tsp dried oregano or thyme
1/4 teaspoon red pepper flakes (optional)
2 cups healing broth or water
1 cup light coconut milk
2-3 tbsp pumpkin seeds, to serve (optional)
Instructions
In a large pot on medium-high heat, add the chopped pumpkin, onion, minced garlic, and chopped ginger. Stir them around for a minute until they release their beautiful aromas.
Next, sprinkle in the ground cumin, ground coriander, paprika, and your choice of dried oregano or thyme. Don’t forget the red pepper flakes if you're feeling adventurous!
Pour in the healing broth or water, and let this delightful mixture come to a gentle simmer. Cook, uncovered, for about 20-30 minutes until the pumpkin is tender.
Once the pumpkin softens, remove the pot from heat and let it cool down for a couple of minutes. Then, purée the soup using an immersion blender or carefully transfer it in batches to a standing blender.
After blending, stir in the light coconut milk into the now-smooth pumpkin soup, giving it a rich texture and taste that's simply irresistible.
Serve hot and garnish with pumpkin seeds for an extra crunch and nutrition boost.
